Instant Pot Chili Con Carne - No Beans

Instant Pot Chili No Beans is simple and easy to make, and it is perfect for a quick weeknight meal. This no beans chili recipe can be served with steamed rice, our Cracker Barrel Cornbread Muffins, or tortilla chips, and it also makes a great leftovers lunch.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 10 oz can of Rotel tomatoes
  • 28 oz can of crushed tomatoes or diced tomatoes
  • 6 oz can of tomato paste
  • 1 tablespoon ground cumin
  • 2 tablespoon ground chili powder
  • 28 oz beef broth

Instructions

  • Turn the Instant Pot on to Saute mode. Add in the ground beef, diced onion, and minced garlic. Cook until the beef is browned and onion translucent.

  • Add the tomatoes, cumin, chili powder, Rotel, tomato paste, and beef broth.
    10 oz can of Rotel tomatoes, 28 oz can of crushed tomatoes, 6 oz can of tomato paste, 1 tablespoon ground cumin, 2 tablespoon ground chili powder, 28 oz beef broth
  • Add the lid to the Instant Pot, ensuring the valve is set to Sealing Mode.
  • Turn the Instant Pot on by hitting the Chili/Bean button and adjust the time manually to 12 minutes. Since you have no beans in the pressure cooker, you only need 12 minutes. Allow up to 15 minutes for the pressure cooker to build up pressure before the cook countdown starts.
  • After the cook timer beeps, allow a natural release of 10 minutes before turning the valve to Vent. Adjust salt and pepper seasoning and stir.
  • Serve immediately and enjoy!

Notes

  • Use lean ground beef, that way you don't have excess fat in the chili.
  • Be sure to naturally release so the pressure cooker finishes marrying the spicy flavors together well.
