Ingredients

  • 4 oz olive oil
  • 1 teaspoon orange zest
  • 1 teaspoon lemon zest
  • ½ cup orange juice (juice from 2 oranges)
  • cup lemon juice (juice from 2 lemons)
  • ¼ cup Dijon mustard
  • 2 tablespoon oregano , dried
  • 6 cloves garlic , minced or grated
  • 1 teaspoon salt
  • ¾ teaspoon pepper
  • 3 lbs Yukon Gold Potatoes , 2 - 2 ½" size
  • 1 orange , cut into slices or wedges for garnish
  • 1 lemon , cut into slices or wedges for garnish

Instructions

  • Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil. Spray with non stick spray or a little olive oil. Cut potatoes into quarters and scatter on the baking sheet, evenly spread out.
    3 lbs Yukon Gold Potatoes
  • Whisk together the olive oil, orange zest, lemon zest, orange juice, lemon juice, and mustard, oregano, salt, and pepper.
    4 oz olive oil, 1 teaspoon orange zest, 1 teaspoon lemon zest, ½ cup orange juice, ⅓ cup lemon juice, ¼ cup Dijon mustard, 2 tablespoon oregano, 6 cloves garlic, 1 teaspoon salt, ¾ teaspoon pepper
  • Baste the potato quarter well with the Citrus Herb dressing. Roast in preheated oven for 20 minutes.
  • Remove baking sheet and gently stir potatoes and baste again with Citrus Herb dressing. Return to the oven and roast for the remaining 20 to 25 minutes until tender, but still firm and browned on edges.
  • Remove from oven and gently lift the aluminum foil to loosen the potatoes and transfer to a serving dish. Garnish with orange and lemon slices or wedges, and serve with the remaining Citrus Herb Dressing.

Notes

  • Buy the smaller Yukon Gold potatoes, so prep is simply quartering them.
  • Line your baking sheet with aluminum foil for an easy clean up.
  • You can use orange juice and lemon juice that has already been squeezed.
