TikTok Green Goddess Salad

Ingredients

Green Goddess Salad Base

  • ½ large cabbage diced up
  • 1 Cucumber English or Armenian type
  • 1 bunch green onions sliced thin
  • ¼ cup chives minced

Green Goddess Salad Dressing (or Green Goddess Dip)

  • 2 lemons juiced (discard the seeds)
  • ¼ cup olive oil
  • 2 tablespoon rice vinegar
  • 2 cloves garlic minced
  • 1 shallot cut into quarters
  • 1 cup basil fresh leaves
  • 1 cup spinach leaves only, washed and drained off
  • cup Parmesan cheese grated
  • ¼ cup pecans or walnuts if you prefer
  • 1 teaspoon salt

Instructions

For the Salad Base

  • Dice up both the cabbage and the cucumber. I recommend the English, or Armenian 'burpless' type of cucumber. These are the long skinny ones that come wrapped in plastic.
    ½ large cabbage, 1 Cucumber
  • Slice up the bunch of green onions finely. Then, using scissors (it's just SO much easier) slice up the chives. I use herb mincing scissors, they are amazing.
    1 bunch green onions, ¼ cup chives

For the Green Goddess Dressing (or Green Goddess Dip)

  • Add the TikTok Green Goddess salad dressing ingredients to a mini food processor, or a blender. Start with the liquids first, then the shallot, spinach, basil, Parmesan, and the nuts. Add the salt last.
    2 lemons, ¼ cup olive oil, 2 tablespoon rice vinegar, 2 cloves garlic, 1 shallot, 1 cup basil, 1 cup spinach, ⅓ cup Parmesan cheese, ¼ cup pecans, 1 teaspoon salt
  • Pour the Green Goddess salad dressing directly onto the bowl of chopped cabbage, cucumber, onions, and chives. Give it a nice mix or tossing, and serve immediately. Garnish with toasted croutons, or candied pecans.
  • You can also make the Green Goddess salad dressing and use it as a dip for vegetables.

Notes

  • If chopping up a head of cabbage daunts you, purchase shredded cabbage that is sold in the bag. It is not quite the same texture, but it is a HUGE timesaver!
  • Make the salad dressing up and keep it separate until ready to serve. This is helpful for picnics, potlucks, holiday gatherings, etc.
  • Try the salad dressing as a Green Goddess Dip for a table of crackers, cheese, and vegetables.

Substitutions

Substitute nutritional yeast if you want to make this as the original version of the TikTok Green Goddess Salad. This salad was originally developed for a vegan diet, so Parmesan cheese was replaced with nutritional yeast.
