Ingredients

  • 12 slices Bacon cooked or raw
  • 4 Carb Balance wraps
  • 4 tablespoon mayonnaise
  • 1 cup lettuce shredded
  • 1 cup tomatoes diced
  • salt to taste
  • pepper to taste

Instructions

  • Lay the bacon out in the air fryer, and cook at 350 F for 12 minutes. Or, you can fry the bacon in a skillet, or oven if cooking larger quantities.

  • While the bacon is cooking, set up the Carb Balance, or other flour tortillas. Spread mayonnaise on each tortilla wrap first, then add the shredded lettuce.
    4 Carb Balance wraps, 4 tablespoon mayonnaise, 1 cup lettuce
  • Dice the tomatoes, but wait until after you add the cooked bacon.
  • Place the bacon on top, sprinkle on some of the diced tomatoes, season with salt & pepper, and wrap tightly, tucking the ends in as you roll up. Cut in two, serve and enjoy!

Notes

  • Pre Cooked bacon is a huge time saver. Just microwave between two paper towels for 15 seconds to reheat. Allow 12 minutes for each basket of bacon.
  • You can also cook the bacon in the oven on a cookie sheet, ideal for large number of wraps.
  • Carb Balance or a similar brand of lower carb tortillas keep the carb load low.
