Valentine's Strawberry Fudge

Valentine's strawberry fudge is the perfect way to show your loved ones just how much they mean to you. Beautiful in its bright red-pink color and pretty heart decorations, but it tastes absolutely divine also!

Ingredients

  • 1 tub Buttercream frosting
  • ¾ cup red candy melts
  • ¾ cup pink candy melts
  • 1 teaspoon Strawberry extract optional if you are using flavored candy melts or flavored frosting.
  • 1 teaspoon Valentine Sprinkle mix
  • 1 teaspoon pink and red heart sprinkles

Instructions

  • Melt the red candy wafers by using a Wilton candy melter, the microwave, or even an inexpensive sous vide circulator attached to a saucepan of water.
    Microwave Method: Melt the candy melts in the microwave in 20 second increments. Stir in between each increment. Remove when fully melted.
    Wilton Candy Method: Add candy melts to the melter and turn it on. Stir every few minutes until fully melted.
    Sous Vide Melting Method: Attach the sous vide circulator to a saucepan ¾ full of warm water. Seal each color of candy melting wafers in sous vide bags or air tight ziplock bags. Tuck each bag in the water and turn the sous vide to 115 F. After it reaches 115 F, replace some of the water and replace with ice cubes to reduce the temperature to 80 F. While the water works it way back to 91 F, take the bags of candy melts out every few minutes and squish them to help create the Form V crystals needed to have well tempered candy melts.

  • Repeat the melting process for the pink candy melts next. Keep the red and pink melted candy in separate bowls.

  • Remove the frosting tub lid and microwave for 45 seconds to one minute, or until melted. Stir to make it smooth and creamy. Set aside about half a teaspoon so you can attach candy hearts to the fudge later, if you are using them.

  • Add the strawberry extract to the melted frosting and mix in well.

  • Pour half the frosting into the bowl of melted red candy melts, and half into the bowl of melted pink candy melts.
  • Stir both bowls vigorously until well blended.
  • Line your square baking dish with parchment paper, making sure to leave some overhang so you can lift the fudge out after it sets up.
  • Alternate pouring the red and pink mixtures into the baking dish so that you get a marbled look.
  • Once all the melted frosting mixtures are poured into the baking dish, tap it on the counter a few times to settle it and remove any air pockets.
  • Sprinkle the top with the Valentine's sprinkle mix and use that teaspoon of frosting your set aside to glue the larger heart decorations on the surface of the fudge. Chill for two hours in the refrigerator. Slice and serve!

Notes

  • Use caution when melting the candy melts. Too much heat will make them seize and harden, rendering them useless. The 'defrost' setting has a gentler heat and will reduce the chance of seizing the candy melts.
