Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground beef lean
  • 1 medium onion diced
  • ½ teaspoon garlic powder or two cloves, minced
  • 1 teaspoon cumin ground
  • 1 teaspoon chili powder Optional
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can diced tomatoes 16 oz, undrained
  • 1 can Ranch Beans
  • 12 oz mixed vegetables frozen
  • 1 can corn 16 oz whole kernel, drained
  • 4 cups beef broth
  • 2 large potatoes cubed
  • 1 can Rotel tomatoes mild

Instructions

  • Brown the ground beef with the olive oil in a large pot or Dutch oven over medium heat. Drain off any excess fat.

  • Add the onion to the pot and cook until softened.

  • Stir in the cumin, garlic powder, salt, and pepper. If using chili powder or cayenne, stir it in now also.

  • Add the diced tomatoes and Ranch Beans to the kettle.

  • Add the mixed vegetables, corn, and broth to the pot. Bring to a boil, then reduce heat to a simmer.

  • Add the cubed potatoes and Rotel to the dutch oven or pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender. Serve hot with your favorite sandwich, sides, or crusty bread.

Notes

  • Use a good quality ground beef. This will make a big difference in the flavor of the soup.
  • Sauté the onions and garlic until they are soft and fragrant. This will add depth of flavor to the soup.
  • Add a bit of chili powder or cayenne pepper to taste. This will give the soup a bit of a kick.
  • Simmer the stew for a long enough time so that the flavors have time to meld together.
