Fresh Pineapple Popsicles
Homemade pineapple popsicles are the perfect way to cool down and satisfy your sweet tooth. Made with fresh pineapple and some coconut milk, these popsicles are naturally sweet, creamy, and delicious.

- 1 Pineapple whole, fresh, cut
- 4 oz coconut milk canned, optional
- 1 lime squeezed
Cut the top and bottom off a whole, ripe pineapple.

Then, using a sharp serrated knife, cut the sides off in 2" portions until you cut the rind off all around the pineapple.
Cut the pineapple in quarters, and then cut the center core from each of the four quarters.
Cube, chunk, or slice each quarter.
Add the pineapple, coconut milk (optional), and a squeezed lime to your blender. Blend until smooth and creamy.

Pour the blended pineapple mixture into the popsicle cavities. Insert popsicle sticks and freeze for at least 6 hours.PRO TIP: If you don't have a popsicle mold, you can use paper cups or ice cube trays. Paper Dixie cups work great!
- Use fresh, ripe pineapple for the best flavor.
- For a fun twist, add some chopped fruit or coconut to the popsicle mixture.
- Let the popsicles freeze for at least 6 hours, or overnight, for the best results.
- To remove the popsicles from the molds, run them under warm water for a few seconds.
