Amish Vinegar Dressing Coleslaw

Old fashioned Amish coleslaw is an American classic side dish that's perfect for summer gatherings. The tangy vinegar dressing and the crunchy cabbage are a match made in heaven.

Ingredients

  • 16 oz slaw mix or small head of cabbage shredded
  • 1 small carrot shredded if using head of cabbage
  • ½ onion diced finely, or 5 green onions, chopped.
  • ¼ cup apple cider vinegar
  • 2 tablespoon honey or sugar
  • 2 tablespoon vegetable oil or olive oil
  • salt to taste
  • black pepper to taste

Instructions

  • Empty the bag of coleslaw mix into a large mixing bowl.
    PRO TIP: Or, shred a small head of cabbage and one small carrot in your food processor instead of using pre made coleslaw mix.

  • Add the finely diced onion, or the chopped green onions.

  • In a small bowl, whisk together the apple cider vinegar, honey, vegetable oil, salt, and pepper.
    ¼ cup apple cider vinegar, 2 tablespoon honey, 2 tablespoon vegetable oil, salt, black pepper
  • Pour the vinegar dressing over the bowl of shredded cabbage mixture.
  • Toss to coat the shredded cabbage and chill for two hours or overnight before serving.

Notes

  • Let this old fashioned cabbage salad with vinegar chill in the refrigerator for at least 2 hours, or overnight, before serving. This will allow the flavors to blend.
  • This vinegar dressing can be used on other vegetables, such as carrots, celery, or cucumbers. It can also be used as a marinade for chicken or fish.
