Watermelon Fruit Salad

This refreshing watermelon fruit salad is the perfect summertime treat. It's made with fresh, seasonal fruits like watermelon, strawberries, raspberries, and cherries, and it's tossed in a light and minty lime dressing.

Ingredients

For the Watermelon Salad

  • 4 cup watermelon cubed into 1" pieces
  • cup strawberries washed, hulled, and halved
  • cup raspberries
  • cup cherries pitted, fresh or frozen

For the Lime Mint Salad Dressing

  • teaspoon lime zest
  • 2 tablespoon lime juice
  • 2 tablespoon honey
  • 1 tablespoon mint leaves fresh, chopped
  • mint leaves for garnish

Instructions

  • In a small bowl, whisk together the lime zest, lime juice, honey, and chopped mint. Chill in the refrigerator until ready to use.

  • Place the cubed watermelon, halved strawberries, raspberries, and pitted cherries all in a large bowl.
    4 cup watermelon, 1½ cup strawberries, 1½ cup cherries, 1½ cup raspberries
  • Drizzle the chilled lime mint dressing over the top of the bowl of watermelon fruit salad.
  • Gently toss the watermelon fruit salad with the lime and mint salad dressing.
  • Garnish with some extra chopped mint and chill until ready to serve.

Notes

  • Use fresh, ripe fruit. The fruit should be sweet and juicy.
  • Cut the fruit into bite-sized pieces. This will make it easier to eat and will help the salad to blend together better.
  • Add a light and flavorful dressing. The dressing should complement the fruit and not overpower it.
  • Chill the salad before serving. This will make it even more refreshing.
