- 2 lbs potatoes Yukon, Red, or any
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
Dice potatoes in ½" to 1" pieces. (You don't have to peel if using Yukon gold, or red potatoes).

In a large bowl, combine the diced potatoes, olive oil, salt, pepper, garlic powder, and paprika. Toss to coat.

Spread the seasoned, diced potatoes in a single layer in the air fryer basket. Depending on the type or size of your air fryer, you may need air fry in two batches to prevent overcrowding.
Air fry for 20-25 minutes at degrees 350 F, or until the potatoes are golden brown and crispy.
Transfer the air fried diced potatoes to a serving dish or platter, adjust seasoning, and serve immediately.
- Don't overcrowd the air fryer basket. Overcrowding will prevent the diced potatoes from cooking evenly.
- Shake the air fryer basket halfway through cooking to ensure the diced potatoes cook evenly.
