Tropical Fruit Salad

This tropical fruit salad is perfect for a healthy breakfast or snack that will brighten up your day! All you need are some ripe fresh fruits like mangoes, pineapples, kiwi, and strawberries.

Ingredients

  • ½ fresh pineapple cut in 1" pieces - about 3 cups
  • 1 mango cut into cubes - about 1 cup
  • 6-8 strawberries quartered - about 1 cup
  • 4 kiwi's peeled and sliced - about 1 cup
  • ½ cup orange juice squeezed from one orange
  • ¼ cup honey

Instructions

For the Fruit

  • Cut the peel of the pineapple and core it. Slice into chunks. Wash, stem, and quarter the strawberries.
  • Peel the kiwi and slice them. Slice the mango fruit off each side and chop the fruit, or use frozen mango chunks that are defrosted.
  • Add all the fruit to a large mixing bowl.
    ½ fresh pineapple, 1 mango, 6-8 strawberries, 4 kiwi's
  • Mix the orange juice and honey together in a small bowl. Pour on the fruit in the bowl and toss.
    ½ cup orange juice, ¼ cup honey
  • Chill salad for 30 minutes, then toss once more before serving.

Notes

  • If time is important, take advantage of the pre cut fruits in the produce department. You will find mango chunks in the freezer case, and they defrost as perfectly as fresh cut mango!
