Slow Cooker Chicken and Gravy Over Mashed Potatoes
Slow Cooker Chicken and Gravy over mashed potatoes is classic comfort food, that's hearty & filling. Rich and creamy mashed potatoes topped with juicy chicken pieces smothered in savory homemade gravy, make for an irresistible combination.
Start by placing the chicken breasts in the bottom of your slow cooker.
4 large Chicken breasts
Sprinkle the top of the chicken with the dry ranch seasoning mix.
1 packet Ranch Seasoning Mix
Empty the can of cream of chicken soup and either the chicken broth of the water to the slow cooker. PRO TIP: Add a bay leaf, ¼ teaspoon rosemary, or ¼ teaspoon thyme under the chicken for extra flavor.
1 can Cream of chicken soup, 1 cup Chicken broth, 1 Bay leaf
Cover, and set the slow cooker to LOW for 4 - 6 hours, OR on HIGH for 2 - 3 hours.
Once the chicken is cooked through and is fork tender, use a hand mixer or two forks and shred the chicken apart into medium sized chunks.
Mix the shredded chicken with the gravy. Taste and adjust salt and pepper to taste. Plate over mashed potatoes (See our Instant Pot Bob Evan's Mashed Potatoes recipe! - It's amazing!) and serve while hot.

Add some extra flavor with a bay leaf or a sprig of thyme added to the slow cooker.
Serve over any mashed potatoes, rice, or noodles.
Use a slow cooker liner for faster clean up.
If short on time, you can use a store bought rotisserie chicken. Shred, add the remaining ingredients, and slow cook for half the time.
