Kapusniak - Polish Cabbage Soup

Kapusniak is a traditional Polish cabbage soup chock full of vegetables.

Some versions of Kapusniak include sauerkraut also, but it's optional.

Saute the onion and garlic until fragrant.

Add the diced carrots and celery and saute until softened.

Add diced tomatoes, chicken stock, and shredded cabbage.

If you want a sour flavor, add 2 cups of drained sauerkraut while the Polish Cabbage Soup is simmering.

After simmering, adjust the seasonings to taste and serve.

Serve Kapusniak with crusty bread or crackers for a light meal, or for a lunch side.
