Spanish Potato Tortilla

Spanish potato tortilla is the national dish for Spain. It's really more like a thin sliced onion and potato omelette.

Slice the potatoes and onions very thin, a mandoline is helpful!

Add the potatoes and onions to a large bowl.

Add the seasoning ingredients.

Lightly brown the seasoned potato and onion slices until soft and potatoes almost cooked.

Mix the eggs and pour over the sauteed sliced onions and potatoes. Cover and cook until the eggs are set.

Serve hot or cold, as a meal or an appetizer, you'll find potato tortilla served as tapas in all the baras (pubs).
