Ingredients

  • 3 tablespoon Olive oil
  • 1 Onion diced
  • 1 bunch Green onions sliced
  • 3 cloves Garlic minced
  • 2 lbs Spinach fresh spinach
  • 2 Eggs
  • ½ cup Ricotta cheese
  • 5 oz Feta cheese crumbled
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ½ teaspoon Dill weed dried, or 1 tablespoon fresh
  • 2 sheets Puff pastry sheets frozen, defrosted, and unfolded
  • Olive oil optional - to brush spinach pie top

Instructions

  • Preheat the oven to 350 degrees F. Line a 9 x 9 baking pan or casserole dish with parchment paper, or spray the baking pan with non stick cooking spray.
  • Heat the olive oil in a large skillet or deep Dutch oven over medium heat. Add the onion, green onions, garlic and cook until soft.

  • Add the spinach in batches, cooking until it's wilted, then remove from heat.

  • Combine the ricotta, crumbled feta, eggs, and seasonings in a bowl until mixed well.
    2 Eggs, ½ cup Ricotta cheese, 5 oz Feta cheese, 1 teaspoon Salt, ½ teaspoon Black pepper, ½ teaspoon Dill weed
  • Stir the cheese mixture into the spinach mixture until combined well.
  • Place one sheet of puff pastry in the bottom of the baking pan. Add the spinach and cheese mixture, spreading out evenly in the baking pan.

  • Top the spinach mixture with the second sheet of puff pastry, and brush with some olive oil.
  • Bake in the preheated oven for 40 minutes, or until the puff pastry is golden brown and flaky. Remove from the oven and let rest for 10 minutes to set up before cutting and serving.
