Fruit and Cheese Platter

A red, white and blue fruit and cheese platter is a great addition to any celebration this summer, from the Fourth of July to Labor Day. It's easy to put together, and your guests will love the combination of flavors and textures. Plus, it's a fun way to celebrate America's colors! Here are a few tips on putting together your own patriotic platter.

Ingredients

  • 4 lbs fresh strawberries (see recipe note below about the strawberries)
  • 18 oz fresh blueberries
  • 16 oz white cheddar cheese (two 8 oz blocks)

Instructions

  • Wash the berries and spread them out on a paper towel lined cookie sheet so that they dry off. Pull the green stems off, but don't cut the tops of the strawberries off.

  • Place the blueberries in a small bowl and place in the corner as a placeholder for the square section.

  • Line up the strawberries in a double line, at the top of the long side of the platter. Skip a space and add a double row of strawberries in the middle of the tray. Then, add another double row of strawberries at the bottom edge of the tray.
  • Slice the cheese blocks into ¼" slices. Line two slices side by side in between the rows of strawberries.
    16 oz white cheddar cheese
  • You can leave the blueberries in the white bowl in the corner square of the tray, or you can pour them out and fill the square space with them. Serve immediately, or cover and chill for up to 1 day.

Notes

  • Depending on the time of year and the quality of the strawberry harvest, you may need to buy more than 3 pounds of strawberries by the time you weed out any bruised, too small, or too large berries.
  • You will average 3 - 4 pounds of strawberries.
  • Try to avoid slicing the tops stems off the strawberries so their juice can make the cheese gooey. The strawberries stay fresher longer also.
  • You can substitute white chocolate covered pretzels, white chocolate chips, marshmallows, or white covered almonds  for the white cheese.
