Chicken Salad Wraps

Chicken salad wraps are an excellent option if you're looking for an easy and delicious meal to make for lunch. Not only are these tasty wrap sandwiches full of flavor, but they're easy to make and travel great!

Ingredients

  • 2 lbs chicken thighs deboned and skin off
  • 2 tablespoon olive oil or butter
  • 1 cup sliced almonds
  • ¾ cup mayonnaise
  • tablespoon Dijon mustard
  • 2 stalks celery diced
  • 1 apple diced
  • salt to taste
  • pepper to taste
  • 6 Spinach low carb wraps or any wraps
  • lettuce large leaves to add to wrap or use as a wrapper

Instructions

  • Cut the chicken thighs into bite size pieces and add to a saute pan with olive oil or butter. Season with salt and pepper, or any other seasoning you love.

  • Cook until the chicken is no longer pink in the middle, and any pan juices are clear. Remove from saute pan with cooked chicken and set aside to cool. Dice the apple and the stalks of celery into small dice while chicken is cooling.

  • Once the chicken has cooled add to a large mixing bowl. Add the diced apple, celery, mayonnaise, Dijon mustard, and almonds to the mixing bowl and blend until mixed well and coated with the mayonnaise dressing. Chill for one hour for best flavor development.
    1 cup sliced almonds, ¾ cup mayonnaise, 1½ tablespoon Dijon mustard
  • Spread chicken salad on low carb spinach wraps and roll up like a burrito. You can also add a scoop on top of your favorite salad greens!
    6 Spinach low carb wraps, lettuce

Notes

  • Panera Chicken Salad - Make Panera's delicious Napa Almond Chicken Salad at home simply by substituting the diced apples with sliced green grapes. Serve on fresh 7 grain wheat bread with lettuce.
  • You may need to moisten this chicken salad with a little more mayonnaise after 24 hours. Simply stir in by the tablespoon until you have the the chicken salad is moistened sufficiently.
  • Chill for one hour for best flavor development.
