Oven Shrimp Skewers

Ingredients

  • 1 lb shrimp fresh or frozen, deveined, butterflied
  • ¼ cup olive oil
  • 3 tablespoon lime juice juice of one large lime
  • 2 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne optional
  • 1 lime quartered for garnish

Instructions

  • Preheat the oven to 400F and if using wooden skewers, soak them in water for 15 to 20 minutes to prevent them from burning in the oven.
  • In a large bowl, add the shrimp, olive oil, smoked paprika, garlic powder, cayenne, salt, pepper, and lime juice. Toss to mix well.

  • Thread the the shrimp onto the wooden or steel skewers. You can also skewer vegetables on extra skewers and cook them at the same time!
  • Brush with any of the remaining marinade in the bowl.
  • Lay the skewers on the broiling rack and bake in the oven 4" to 6" below the broiler element for about 6 minutes, or until the shrimps start to turn pink.
  • Turn the broiler on for the 2 remaining minutes to get a little charring on the edges of the shrimp.
  • Quickly remove from the oven and transfer to a serving platter! Squeeze with lime juice before serving.

Notes

  • If using wooden skewers, be sure to soak them in water for an hour or so before threading the shrimp and cooking them.
  • You can also grill these on your Blackstone or Traeger, just watch them carefully as they cook quickly.
  • Toss the seasoned shrimp in your air fryer without the skewers for fabulous seasoned air fryer shrimp cooked in less than 5 minutes!
