Preheat the oven to 350 degrees F, and spray a muffin tin with non stick cooking spray. Mix the cinnamon and sugar to make cinnamon sugar.
¼ cup Sugar, 1½ teaspoon Cinnamon
Wash and core the apples, then cut into half circle slices and put them in a mixing bowl.PRO TIP: Your apples will be a little easier to roll up if you warmed them in the microwave for 30 to 45 seconds. Soften before mixing with the cinnamon sugar though. Toss the apples with the lemon juice. Microwave for 30 seconds to soften apples. Stir in 2 teaspoon of cinnamon sugar.
3 large Apples, 2 tablespoon Lemon juice
Melt the butter and brush it on each puff pastry sheet. Sprinkle the remaining cinnamon sugar over the two puff pastry sheets.
1 box Puff pastry sheets, 2 tablespoon Butter
Cut each pastry sheet into six equal width strips, about 2" wide.
Lay overlapping apple slices along the pastry strip length, keeping one side of the strip uncovered.
Fold the uncovered side of pastry strip over the length of the overlapping apples.
Carefully roll up the strip of pastry and apples into a puff pastry apple rose.
Place each puff pastry apple rose in a muffin tin cavity that you previously sprayed with non stick cooking spray.
Once the muffin tin is full, bake in the oven at 350 degrees F for 25 to 30 minutes, or until golden brown and the pastry is puffy. Cool 12 minutes before removing. Dust with powdered sugar before serving.
