- Cinnamon - Ceylon cinnamon is sweeter than Saigon cinnamon, and best for baking.

- Preheat the oven to 350 degrees F, and spray a muffin tin with non stick cooking spray. Mix the cinnamon and sugar to make cinnamon sugar.
- Wash and core the apples, then cut into half circle slices and put them in a mixing bowl.
- Toss the apples with the lemon juice. Microwave for 30 seconds to soften apples. Stir in 2 teaspoon of cinnamon sugar.
Prepare The Puff Pastry
- Melt the butter and brush it on each puff pastry sheet. Sprinkle the remaining cinnamon sugar over the two puff pastry sheets.
- Cut each pastry sheet into six equal width strips, about 2" wide.
