Whether you're making the store bought Jiffy mix, or making the Homemade Jiffy cornbread mix recipe, add the dry ingredients to a medium size mixing bowl.
Whisk to break up any lumps, or if making from scratch, to combine all dry ingredients.
Add the egg and milk for the box mix, if making from scratch, add the egg, milk, and oil. Mix lightly until combined. Batter will be a little lumpy, but that is fine.
Spray a 6" to 7" round air fryer pan, or small springform pan with non stick cooking spray.
Pour batter into the pan, and place in the air fryer for 16 to 22 minutes at 320 F. You don't even need to preheat the air fryer!
At 16 minutes, peek to check for browning and doneness. Use a toothpick to stick in the middle. If it comes out clean, remove from the air fryer and cool.
If the toothpick is not clean, continue to cook in the air fryer for another 3 to 5 minutes.
Remove from the air fryer and cool for 5 minutes before removing from the pan. Melt some butter over the top of the cornbread, then slice into pieces and serve!
