- 3 cup cooked wild rice
- ½ cup Celery diced
- 1 medium Apple seeded and diced
- ½ cup Peas frozen, thawed
- ½ small Red onion diced
- 3 Green onions sliced thin
- ½ cup Pecans chopped
Honey Dijon Salad Dressing
- ¼ cup olive oil
- 2 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 ts honey
- ¾ teaspoon salt or to taste
- ¼ teaspoon black pepper or to taste
Prepare Honey Dijon Salad Dressing
If you need to cook wild rice, add 1 ½ cup wild rice to a rice cooker with 3 cups water and 1 teaspoon of salt. Allow to cool completely before making the salad. Prepare the salad dressing and chill in the refrigerator so that flavors can marry together. ¼ cup olive oil, 2 tablespoon red wine vinegar, 1 teaspoon Dijon mustard, 1 ts honey, ¾ teaspoon salt, ¼ teaspoon black pepper
Combine the salad dressing ingredients in a small jar. Whisk together until completely combined. Chill.
Prepare Wild Rice Apple Salad
In a large bowl, add the cooked wild rice, diced celery, thawed green peas, diced read onion, diced apple, sliced green onions, and chopped pecans.
3 cup cooked wild rice, ½ cup Celery, 1 medium Apple, ½ cup Peas, ½ small Red onion, 3 Green onions, ½ cup Pecans
Toss until all ingredients are evenly distributed.
Pour the Honey Dijon dressing over the bowl of ingredients and stir well to coat and combine.
Cover the dressed salad with plastic wrap and chill until ready to serve.
PRO TIP: To prepare wild rice in a rice cooker, add 1 ½ cup wild rice to a rice cooker with 3 cups water and 1 teaspoon of salt. Allow to cool completely before making the salad.
