Air Fryer Red Potatoes

These crispy and air fryer red potatoes are cooked to perfection, making them a healthier alternative to traditional fried potatoes. They make a delicious side dish that's perfect for any occasion.

Ingredients

  • 2 lb red skin potatoes baby size
  • tbs olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Wash the potatoes and then slice them in half. Place in a large mixing bowl.

  • Drizzle the red skin potatoes with the olive oil and sprinkle the salt, pepper, and garlic powder on them. Toss to coat.
    1½ tbs olive oil, 1 teaspoon garlic powder, 1 teaspoon salt, ½ teaspoon black pepper
  • Add the seasoned red potatoes to the air fryer basket and cook at 400 degrees F for 10 minutes.
  • Open the basket and shake or stir the potatoes and cook for an additional 8 to 10 minutes, or until golden browned and fork tender.
  • Adjust salt and pepper and then transfer the air fried red skin potatoes to a serving bowl or platter. Garnish with parsley and serve immediately.

Notes

  • Use small to medium-sized potatoes. This will help them cook evenly.
  • Don't overcrowd the air fryer basket. This will prevent the potatoes from cooking properly.
  • Shake the air fryer basket halfway through cooking to help the potatoes cook evenly.
  • If you don't have an air fryer, you can also cook these potatoes in the oven. Preheat the oven to 400 degrees Fahrenheit and roast the potatoes for 20-25 minutes, or until golden brown and crispy.
