  • 1 lb strawberries fresh, washed, hulled, and quartered
  • 14 oz canned coconut milk full fat
  • ½ cup sugar
  • ½ lemon squeezed
  • 1 tablespoon vanilla extract

Instructions

  • Wash and hull the fresh strawberries.
  • Cut the strawberries into quarters and place in the blender.

  • Add the coconut milk, sugar, lemon juice, and vanilla into the blender with the strawberries.
    14 oz canned coconut milk, ½ cup sugar, ½ lemon, 1 tablespoon vanilla extract
  • Place the lid on the blender and puree the contents until smooth and creamy, about 2 minutes.
  • Line a loaf pan with parchment paper or aluminum foil.
  • Pour the pureed strawberry mixture into the loaf pan and freeze for 6 hours.

Notes

  • Use full-fat coconut milk for the best flavor and texture.
  • Run hot water over the ice cream scoop before scooping, it will make it easier to get nice rounded scoops.
