Frozen Chocolate Covered Banana Pops

- 4 large bananas just ripe, not spotted
- 12 oz semi sweet chocolate chips or any quality chocolate
- 2 tablespoon coconut oil
- ½ cup Rainbow sprinkles or nuts, coconut, granola
Prepare the bananas by peeling them and cutting them in half.

Insert lollipop or wood sticks into the bottoms of each half banana.
Place the chocolate chips in a microwave safe bowl and microwave in one 1 minute burst, and then several 30 second bursts until partially melted.
12 oz semi sweet chocolate chips
Add the coconut oil to the partially melted chocolate chips.
2 tablespoon coconut oil
Stir well until the coconut oil has melted and chocolate thinned.
Dip each skewered banana half into the melted chocolate and set aside on parchment paper covered cookie tray.
Sprinkle with rainbow sprinkles, chopped nuts, shredded coconut, or granola.

Place the cookie tray of chocolate covered banana pops in the freezer for 2 hours before serving, or if you prefer, each them unfrozen!
- Use ripe bananas. The bananas should be ripe, but not soft.
