Frozen Chocolate Covered Banana Pops

Who said healthy snacks can't be delicious? Frozen chocolate covered banana pops are a quick treat you can whip up in minutes. Plus, if you've got kids at home they'll have a blast helping.

Ingredients

  • 4 large bananas just ripe, not spotted
  • 12 oz semi sweet chocolate chips or any quality chocolate
  • 2 tablespoon coconut oil
  • ½ cup Rainbow sprinkles or nuts, coconut, granola

Instructions

  • Prepare the bananas by peeling them and cutting them in half.
    4 large bananas
  • Insert lollipop or wood sticks into the bottoms of each half banana.
  • Place the chocolate chips in a microwave safe bowl and microwave in one 1 minute burst, and then several 30 second bursts until partially melted.
    12 oz semi sweet chocolate chips
  • Add the coconut oil to the partially melted chocolate chips.
    2 tablespoon coconut oil
  • Stir well until the coconut oil has melted and chocolate thinned.
  • Dip each skewered banana half into the melted chocolate and set aside on parchment paper covered cookie tray.
  • Sprinkle with rainbow sprinkles, chopped nuts, shredded coconut, or granola.
    ½ cup Rainbow sprinkles
  • Place the cookie tray of chocolate covered banana pops in the freezer for 2 hours before serving, or if you prefer, each them unfrozen!

Notes

  • Use ripe bananas. The bananas should be ripe, but not soft.
  • Use good quality chocolate. The chocolate will make a big difference in the taste of the pops.
  • Be creative with your toppings. You can use anything from chopped nuts to sprinkles to granola.
  • Freeze the pops for at least 2 hours before serving. This will help the chocolate set and make the pops easier to eat.
