Preheat your oven to 350 degrees F. Spray a regular muffin pan with non stick spray, or insert muffin papers in each cavity.
Mix all the dry ingredients together in a medium sized mixing bowl. Use a whisk to mix them so the spices, ground flaxseed, and flour are all well combined.
2 cup Flour, 1½ cup Flaxseed, 1 teaspoon Baking soda, 1 tablespoon Baking powder, 1 teaspoon Salt, 1 teaspoon Cinnamon, ½ teaspoon Allspice, ¼ teaspoon Cloves, ¼ teaspoon Ginger
In a large mixing bowl, combine the milk, vegetable oil, maple syrup, vanilla extract, apple cider vinegar, and eggs.

Whisk to blend the eggs and liquid ingredients, then add the grated apple to the bowl, combining with the liquids.

Add the blended dry ingredients to the large mixing bowl of dry ingredients.
Using a spatula, fold in the dry ingredients, scraping the sides of the bowl as you go. Blend until just incorporated. It will be slightly lumpy, like thick pancake batter.
Using a measuring cup, fill each muffin cavity ⅔ full. Bake in the preheated oven for 30 minutes at 350 F.
Remove from oven when the flaxseed muffins spring back to a light press in the center of a muffin in the middle of the pan. Allow to cook 5 minutes, then tip out onto a serving plate and enjoy!
