Ingredients

Salsa Chicken

  • 24 ounces chicken breast shredded, from a rotisserie chicken
  • ½ cup salsa fresh or jarred
  • ½ cup ranch dressing

To Assemble the Tacos

  • 12 medium flour tortillas warmed up
  • 1½ cups cheddar cheese grated
  • 1 cup guacamole store bought or homemade
  • ½ cup sour cream
  • 1 bunch cilantro chopped

Instructions

  • Remove the breast meat from a rotisserie chicken and shred with two forks, or your hands.
    24 ounces chicken breast
  • In a large bowl add the salsa and ranch dressing to the shredded chicken, stir until thoroughly mixed. Warm in the microwave for 1 to 2 minutes.
    ½ cup salsa , ½ cup ranch dressing
  • Take one warmed tortilla and place about 3 - 4 tablespoons of salsa chicken down the center of the tortilla.

  • Top with grated cheese, guacamole, sour cream and fresh chopped cilantro.
    1½ cups cheddar cheese, 1 cup guacamole, ½ cup sour cream, 1 bunch cilantro

Notes

  • Shred the chicken small: Smaller pieces coat more evenly and stay tucked inside the tortilla.
  • Warm the filling gently: The chicken is already cooked, so it only needs to be heated through.
  • Drain watery salsa: If your salsa is very thin, spoon off a little liquid before mixing it with the chicken.
  • Warm the tortillas: Warm tortillas fold easier and taste better than cold tortillas straight from the package.
  • Add cool toppings last: Guacamole, sour cream, and cilantro taste best when added after the hot chicken filling.
