A perfect summer treat, these Strawberry Lemonade Popsicles are a simple joy. When summer is in full swing, these homemade popsicles are a great way to beat the heat.
Wash and hull the fresh strawberries, then add them to the blender.
1 lb strawberries
Add the water, and the sugar if you choose to use it.
1 cup water, 2 tablespoon sugar
Blend until the strawberry mixture is smooth.
Pour into the popsicle molds almost to the very top. Leave a little room for expansion.PRO TIP: If you don't have a popsicle mold, you can use paper cups or ice cube trays. Paper Dixie cups work great!
Place the lid and popsicle sticks into each mold according to the type of mold you are using.
Place in the freezer for 6 hours, or until hard. You may need to set your freezer on it's coldest setting.

Ripe Fruit is Key: Use ripe, sweet strawberries for the best flavor. The riper the fruit, the less added sugar you'll need.
Don't Overfill Molds: Leave a little space at the top of your popsicle molds. The liquid will expand slightly as it freezes.
No Molds? If you don't have popsicle molds, use small paper cups and insert popsicle sticks once the mixture is partially frozen (after about an hour).
Freeze Completely: Ensure the popsicles are completely frozen before attempting to remove them, usually at least 4-6 hours, or preferably overnight. This prevents breakage.
Easy Removal: If your popsicles are hard to remove from the molds, run the outside of the mold under warm water for a few seconds. They should then slide out easily.
