Corn, black beans, avocado, and crunchy Doritos chips are tossed with chopped red peppers and green onions, while a zesty Chipotle Lime dressing brings it all together.

Ingredients
Doritos Tex Mex Corn Salad
- 1 can black beans drained
- 1 can corn fire roasted, drained
- 1 red bell pepper chopped
- 6 green onions sliced
- 1 avocados chopped
- 1 cups Doritos broken up smaller
Chipotle Lime Dressing Ingredients
- ¼ cup olive oil
- ¼ cup sour cream
- 2 limes squeezed
- 1 teaspoon lime zest
- 1½ teaspoon salt
- ½ teaspoon ground chipotle
- ½ cup cilantro fresh chopped
Instructions
- Combine the drained black beans, fire roasted corn, chopped red bell pepper, chopped green onion, and chopped avocado into a bowl.1 can black beans, 1 can corn, 1 red bell pepper, 6 green onions, 1 avocados
- Toss all the vegetables lightly to mix. Be gentle so you don't smash the avocado too much.
- Right before tossing with the salad dressing, add the broken Doritos chips.1 cups Doritos
Prepare The Chipotle Lime Dressing
- Using a small bowl, blend together the olive oil, sour cream, lime juice and lime zest, salt, and chipotle powder.¼ cup olive oil, ¼ cup sour cream, 2 limes, 1 teaspoon lime zest, 1½ teaspoon salt, ½ teaspoon ground chipotle
- After mixing until smooth and creamy, pour the dressing on top of the bowl of Doritos topped vegetables.
