- 3 cups fresh pineapple peeled, cored, diced
- ½ cup red onion diced
- 1 red bell pepper diced
- 1 jalapeno seeded, cored, and minced
- ½ cup chopped cilantro chopped coarsely
- 3 tablespoon lime juice juiced (2 small or 1 large)
- 1 teaspoon lime zest
- ½ teaspoon salt
How To Prepare The Fresh Pineapple
Cut off the top and bottom of the pineapple and discard them.

Stand the pineapple upright on one of the cut ends and slice away the tough skin using a sharp or serrated knife, following the contour of the fruit.
Lay the pineapple on its side and slice it into wedges and cut the center core away. Dice into ½″ to 1″ pieces.
Prepare The Pineapple Pico De Gallo
Dice the red onion, red bell pepper, and seed and core the jalapeno. Mince the jalapeno small. Chop the fresh cilantro coarsely.
Add the diced pineapple, red onion, chopped cilantro, minced jalapeno, and salt into a large mixing bowl.

Using a juicer, juice the two limes and add the lime juice and the zest to the bowl of pineapple pico de gallo ingredients.

Toss to mix all ingredients evenly with the lime juice. Chill for 30 minutes or more, then serve with chips, fish tacos, or grilled meats.
- Use Nitrile gloves when handling the jalapeno pepper.
- Roll the limes with the back of your hand on your counter to soften up and release more juice.
- Chill the prepared pineapple pico de gallo for at least 30 minutes so that the flavors can blend together.
