This easy-to-make fruit pico de gallo is incredibly versatile. You're not limited to pineapple! Add some diced fresh mango or peaches even. This fruit based pico de gallo is fabulous with any grilled fish, or tropical themed grilling entree.
- Pineapple - Fresh, diced.
- Jalapeno - Fresh, seeded, cored of membrane, and diced very small.
- Red onion - Diced.
- Red Bell pepper - Diced.
- Cilantro - Fresh, chopped coarse.
- Limes - Mexican Key limes, or any limes, juiced.
- Lime Zest - From the limes before squeezing them.
- Salt

How to Make Pineapple Pico De Gallo
This super simple recipe is prepared in just minutes. The secret to success though is allowing the flavors to meld together in the refrigerator for at least 30 minutes before serving.
Plan accordingly so you can have this delicious pico de gallo with pineapple at full flavor when you're ready to serve your entree.
Prepare The Fresh Pineapple
- Cut off the top and bottom of the pineapple and discard them.
- Stand the pineapple upright on one of the cut ends and slice away the tough skin using a sharp or serrated knife, following the contour of the fruit.
- Lay the pineapple on its side and slice it into wedges and cut the center core away. Dice into ½" to 1" pieces.
Prepare the Pico De Gallo
- Dice the red onion, red bell pepper, and seed and core the jalapeno. Mince the jalapeno small. Chop the fresh cilantro coarsely.
- Add the diced pineapple, red onion, chopped cilantro, minced jalapeno, and salt into a large mixing bowl.
Toss With Lime Juice
- Using a juicer, juice the two limes and add the lime juice to the bowl of ingredients.
- Toss to mix all ingredients evenly with the lime juice. Chill for 30 minutes or more, then serve with chips, fish tacos, or grilled meats.
