Ingredients for Wendy's Apple Pecan Salad

This recipe makes a large salad that can easily feed four, or supplement a meal for six. You can easily use our recipe card sizing tool to make a version for two servings, or even just one person!

Wendy's Apple Pecan Chicken Salad Base

  • Chicken - Previously cooked and diced. A rotisserie chicken is perfect!
  • Romaine lettuce - Or your favorite salad greens blend.
  • Pecans - Chopped, and if you have time, toasted.
  • Blue Cheese crumbles - Or you can also use Gorgonzola or Feta crumbles.
  • Dried Cranberries - Raisins are good also.
  • Apples - Washed, cored, and diced.

Pomegranate Salad Dressing

  • Pomegranate Juice - Bottled.
  • Dijon Mustard
  • Red Wine Vinegar
  • Honey
  • Olive Oil
  • Salt
  • Pepper

How to Make Wendy's Apple Pecan Salad

Use a large, shallow baking dish or shallow salad bowl to prepare this large, centerpiece salad. It will look stunning at the table, buffet, or at a brunch!

Prepare The Pomegranate Dressing

  1. Using a small bowl, whisk together the pomegranate juice, red wine vinegar, Dijon mustard, honey, olive oil, salt, and pepper. Pour into a mason jar and seal, refrigerate until ready to use.

Prepare the Salad Greens

  1. Wash and pat dry the romaine lettuce, spinach, or salad greens you will be using.

  2. Spread them out in the shallow baking dish or shallow salad bowl.

  3. Dice up the cooked rotisserie chicken into ½" to 1" cubes and scatter evenly over the bed of lettuces.

Peel and Chop The Apples

  1. Wash, core, and chop up the apples. Spread them out over the diced chicken evenly.

Garnish With Toppings

  1. Garnish with chopped pecans, dried cranberries, and the crumbled blue cheese.

Ingredients

For Wendy's Apple Pecan Salad Base
