    Ingredients

    You've got to start with the fresh berries! Get whatever is local and fresh. Look around to see what kinds of local honey you can use also.

    How to make this berry salad

    Rinse and stem the strawberries. Wash the blueberries free of any debris and stem twigs. Rinse your blackberries.

    Be careful when rinsing the raspberries, wash them last, right before use, as they will get soggy if you wash them ahead of time. They are so fragile that you have to be careful when you shake them dry in the colander.

    Step 1. Prepare the fruit and the dressing

    Core & chop the apples into chunks. Cut the strawberries into quarters. Leave the remaining berries whole.

    Add the lemon and orange zest to the fresh squeezed orange juice. Then add the honey and mix well.

    Step 2. Mix the dressing into the berry salad

    Pour the honey & orange juice dressing over the prepared fruit.

    Gently toss the berry salad so that the honey orange dressing coats all the fruit. Chill until ready to serve.

    Step 3. Chill and serve

    Chill the berry salad until ready to serve. Take care not to break the raspberries during the tossing. The orange juice in the salad dressing will prevent the apples from turning brown, but keeping the salad chilled until time to serve will help prolong this also.

    Serving Suggestions

    This summer berry salad is perfect as a side for a soup & sandwich lunch, as a part of a breakfast, or even as a dessert topped with vanilla ice cream or whipped cream.

    This fruit salad is also a perfect side dish with Banana Sheet Pancakes for breakfast, or Baked Ziti with Pumpking & Sausage at dinner. It's easy to customize also with whatever berries you have on hand!

    Substitutions

    Use whatever berries you have access to that are fresh and flavorful. Blueberries, strawberries, and apples alone make a terrific blend.

    Variations

    • Tropical Fruit Salad - instead berries, cut up Kiwi, Papaya, and Pineapple for a tropical and vibrant fruit blend.
    • Winter Fruit Salad - use chopped green and red apples, mixed with pomegranate seeds & walnuts for a festive Holiday look.
    • Citrus Fruit Salad - slice up oranges, blood oranges, and honeydew melon for a beautiful fresh looking salad.

    Storage

    You can prepare this salad 24 hours before you serve it. Leftovers should be good for up to 5 days, covered. This is not a dish that freezes though.

    Tips for Success

    • Buy the freshest berries available.
    • Use fresh squeezed orange juice.
    • Keep chilled until time to serve.

    Can I freeze the leftovers?

    Yes, if you plan to use them in smoothies. The fruit will defrost soft, so as a salad it would not be good, but perfect in smoothies.

    • Cook to a minimum temperature of 165 °F (74 °C)
    • Do not use the same utensils on cooked food, that previously touched raw meat
    • Wash hands after touching raw meat
    • Don't leave food sitting out at room temperature for extended periods
    • Never leave cooking food unattended
    • Use oils with high smoking point to avoid harmful compounds
    • Always have good ventilation when using a gas stove

    Ingredients

    • 1 pint strawberries, chopped
    • 6 oz raspberries
    • 6 oz blueberries
    • 6 oz blackberries
    • 3 medium apples, chopped
    • 1 tablespoon lemon zest
    • 1 tablespoon orange zest
    • 3 tablespoon honey
    • 1 Orange, squeezed

    Instructions

    • In a small bowl mix together the honey, orange juice, orange zest, and lemon zest.
      1 tablespoon lemon zest, 1 tablespoon orange zest, 3 tablespoon honey, 1 Orange, squeezed
    • In a large bowl, place the rinsed and chopped fruit.
      1 pint strawberries, chopped, 6 oz raspberries, 6 oz blueberries, 6 oz blackberries, 3 medium apples, chopped
    • Pour the honey orange dressing over the fruit and gently toss to combine and coat the fruit. Chill until ready to serve.

    Notes

    • You can add another tablespoon or two of honey if you prefer the dressing to be sweeter.
    • You can substitute lemon juice and add poppy seeds for a nice Lemon Poppyseed Honey dressing.
    • Be creative with your fruit, you can add grapes, melon, bananas, and more!
