Variations
Your imagination is the only limit to the variations you can make with sheetpan pancakes. Here are some variations my family has enjoyed:
- Bacon & Egg Sheet Pancakes - Crack 8 eggs, four up each side. Lay the bacon back on and bake at 400 F for 15 to 20 minutes, or until the eggs are set up and the pancake golden brown.
- Summer Berries Sheet Pancakes - Use berries instead of bananas. Serve with whipped cream for a really decadent sheet pancake!
- Pumpkin Spice Sheet Pancakes - Add 1 teaspoon of pumpkin pie spice to the flour mixture and mix in. Serve with butter and maple syrup.
- Cinnamon Roll Sheet Pancakes - Mix up the batter, but set aside about ¼ of it in another bowl. Spread the plain batter all over the sheet pan. Mix 1 teaspoon of cinnamon into the reserved batter. Swirl on top of the plain batter. Bake and serve with syrup or whipped cream.
Equipment
You will want a large, rimmed backing sheet for this recipe. I love the set below, and have about 6. They come as a set of two rimmed baking sheet and two cooling racks also!

Frequently Asked Questions
Yes, you can! Reduce the 2 tablespoons of baking powder in the recipe to just 1 tablespoon though, as self rising flour already has some baking powder in it.
Milk not only adds flavor, but the milk fat is necessary for tender, moist pancakes. Plain water just won't give the same results. Milk can also be added in place of water in the "complete" mixes for a thicker texture.
The batter should be slightly lumpy (see tutorial images above) and should pour easily but should not be runny.
