How To Make Banana Sheet Pancakes

Preheat your oven to 425 F and set out a rimmed cookie or baking sheet. Mix your ingredients, spread the batter in the prepared pan. Garnish with bananas and chocolate chips, and bake. Voila, you are your children's hero!

Prepare The Pancake Batter

  1. Combine all the dry ingredients in a bowl and stir them up until they are mixed. In another bowl add the eggs, milk, and melted butter. Whisk to blend.

  1. Add the flour mixture to the bowl of eggs, milk, and butter. Whisk together quickly to incorporate the flour. It will be a little lumpy.

Spread Pancake Batter Out On A Sheet Pan

  1. Pour the pancake batter out on a rimmed sheet pan that has been sprayed with non stick cooking spray. Spread the batter out evenly.

Spread Bananas And Sprinkle On Chocolate Chips

  1. Garnish with sliced bananas and sprinkle with chocolate chips. You can add chopped pecans or shredded coconut also.

  1. Bake in the oven at 425 F for 15 minutes or until the top is golden brown. Cut into squares and serve immediately with warm maple syrup.

  • Bacon & Egg Sheet Pancakes - Crack 8 eggs, four up each side. Lay the bacon back on and bake at 400 F for 15 to 20 minutes, or until the eggs are set up and the pancake golden brown.
  • Summer Berries Sheet Pancakes - Use berries instead of bananas. Serve with whipped cream for a really decadent sheet pancake!
  • Pumpkin Spice Sheet Pancakes - Add 1 teaspoon of pumpkin pie spice to the flour mixture and mix in. Serve with butter and maple syrup.

Frequently Asked Questions

Can I use self raising flour instead of plain for pancakes?

Yes, you can! Reduce the 2 tablespoons of baking powder in the recipe to just 1 tablespoon though, as self rising flour already has some baking powder in it.

Are pancakes better with milk or water?

Milk not only adds flavor, but the milk fat is necessary for tender, moist pancakes. Plain water just won't give the same results. Milk can also be added in place of water in the "complete" mixes for a thicker texture.

How thick should pancake batter be?

The batter should be slightly lumpy (see tutorial images above) and should pour easily but should not be runny.

Instructions

  • Preheat your oven to 425° F.
  • Spray a large baking or rimmed cookie sheet with non stick spray. Set aside.
  • Add the flour, baking powder, sugar, and wisk together.

  • In a large mixing bowl whisk together the milk, eggs, and melted butter.

  • Spread banana slices on the top of the pancake batter. Sprinkle with the mini chocolate chips. Bake for 15 minutes or golden brown and done on top. Serve with maple syrup.
