Cajun Skillet Corn

Ingredients

  • 4 oz butter (½ stick)
  • 2 tablespoon honey
  • 24 oz corn frozen
  • 4 oz cream cheese cubed or softened to room temp
  • 1 teaspoon Cajun spice blend
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup Parsley chopped for garnish

Instructions

  • In a large 12" cast iron or enameled skillet, melt the butter on medium high heat.

  • After the butter has melted, stir in the honey.
    2 tablespoon honey
  • Add the frozen (or fresh) corn niblets to the skillet and saute on medium heat for 6 minutes.
    24 oz corn
  • Add the cream cheese and cook for an additional 5 minutes. Stir so that the cream cheese is blended in with the corn as it melts.
    4 oz cream cheese
  • Add your favorite Cajun or Creole spice blend to the skillet of corn.
    1 teaspoon Cajun spice blend
  • Season with salt, pepper, and sprinkle with some chopped parsley before serving.
    1 teaspoon salt, ½ teaspoon black pepper, ¼ cup Parsley

Notes

  • You can use our recipe for Cajun spice blend to make your own, the benefit being that you can regulate the heat in your Cajun spice seasoning.
  • You can make this Cajun corn recipe without any cream cheese if you prefer also!
  • Sliced green onion, diced red bell pepper, and cooked sausage crumbles, are delicious add in's when making this Cajun corn recipe.
