Ingredients

For Cinnamon Sugar Mixture

  • ¼ cup granulated sugar
  • 2 tablespoon brown sugar
  • 1 teaspoon cinnamon Celyon, ground

For the Crumble Cinnamon Cookie Dough

  • 1 cup butter 2 sticks, softened
  • 1 cup brown sugar packed
  • ¼ cup granulated sugar
  • 2 medium eggs or 1 large egg + 1 egg yolk
  • teaspoon vanilla extract
  • cups flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoon cinnamon Ceylon, ground
  • ¼ teaspoon salt

For the Cinnamon Buttercream Frosting

  • ½ cup butter 1 stick, softened
  • cup powdered sugar
  • ¼ cup brown sugar
  • teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoon milk

Instructions

  • First, preheat the oven to 350° F. Line two rimmed cookie sheets with parchment paper, and set aside.

Prepare the Cinnamon Sugar Coating & Topping

  • Prepare the cinnamon sugar in a small bowl by mixing the brown sugar, granulated sugar, and cinnamon, and whisk to blend. Set aside to roll the cookie balls in later.
    ¼ cup granulated sugar, 2 tablespoon brown sugar, 1 teaspoon cinnamon

Prepare the Crumble Cinnamon Sugar Cookie Dough

  • Using a large mixing bowl, cream the butter, granulated sugar, and brown sugar. Add the vanilla, then the eggs. Cream until light.
    1 cup butter, 1 cup brown sugar, ¼ cup granulated sugar, 2 medium eggs, 1½ teaspoon vanilla extract
  • In a medium mixing bowl, combine the flour, cornstarch, baking powder, baking soda, cinnamon, and salt. Use a whisk and distribute the cinnamon evenly. Add the blended dry ingredients gradually to the creamed butter & sugar bowl, using a hand mixer.
    2¾ cups flour, 1 tablespoon cornstarch, 1 teaspoon baking powder, ½ teaspoon baking soda, 2 teaspoon cinnamon, ¼ teaspoon salt
  • Divide the cookie dough into 12 balls, about ¼ cup per cookie dough ball. Roll each ball into the reserved bowl of cinnamon sugar mixture.
  • Place each sugar coated cookie dough ball on a prepared rimmed cookie sheet, about 2" apart, 6 per cookie sheet. Save the left over cinnamon sugar for later.
  • Bake in the prepared over for 10 minutes. Remove from oven, let cool for 5 minutes and then transfer to a cooling rack. Let cool completely before frosting.

Prepare the Cinnamon Buttercream Frosting

  • In a large mixing bowl, cream the butter, powdered sugar, brown sugar, cinnamon, vanilla extract. Add the milk and blend until smooth and creamy. If too stiff, add another tablespoon of milk.
    ½ cup butter, 1½ cup powdered sugar, ¼ cup brown sugar, 1¼ teaspoon cinnamon, 1 teaspoon vanilla extract, 2 tablespoon milk
  • Scoop frosting into a piping bag fitted with a large star piping tip. Start in the middle of each cookie and squeeze a swirl outward to the edge of each cookie. Sprinkle with the remainder of the cinnamon sugar.

Notes

  • You can use cream, half & half, or any non dairy milk for the buttercream frosting.
  • Ceylon Cinnamon is sweeter for baking that cassia cinnamon. Look for it labeled as Ceylon cinnamon, otherwise it is most likely the cheaper cassia. Cassia is better for savory dishes. Professional bakers prefer Ceylon cinnamon.
  • You can use this same copycat Crumbl cookie recipe, minus the cinnamon, as a cookie base dough for many other copycat crumbl cookies!
