- 2 teaspoon cinnamon ground
- ¼ cup sugar
- 6 teaspoon honey any kind
- 6 Peaches fresh, halved and stones removed
- Vanilla Ice Cream Optional
- ¼ cup pistachios chopped coarsely
Preheat your oven to 375 degrees Fahrenheit. Spray the muffin tin with non stick cooking spray.
In a small bowl, combine the cinnamon with the sugar for homemade cinnamon sugar. Store leftovers in a lidded jar.

Halve the peaches and remove the stone pits.
Brush honey over the peaches with a basting brush. Sprinkle some cinnamon sugar over each peach halve.
6 teaspoon honey, 6 Peaches
Place the peach halves in a muffin tin, casserole, or even a cast iron grilling skillet.
Bake for 20-25 minutes, or until the peaches are tender and the juices are bubbling.
Transfer the roasted peaches to a serving dish or platter. Top each with vanilla ice cream and garnish with chopped pistachio nuts. Serve immediately.
