Honey Roasted Peaches are a quick and simple summer dessert. The slightly caramelized peaches are drizzled with honey and topped with creamy vanilla ice cream and chopped pistachios, making this dessert look as decadent as it tastes.
Preheat your oven to 375 degrees Fahrenheit. Spray the muffin tin with non stick cooking spray.
In a small bowl, combine the cinnamon with the sugar for homemade cinnamon sugar. Store leftovers in a lidded jar.
2 teaspoon cinnamon, ¼ cup sugar
Halve the peaches and remove the stone pits.
Brush honey over the peaches with a basting brush. Sprinkle some cinnamon sugar over each peach halve.

Place the peach halves in a muffin tin, casserole, or even a cast iron grilling skillet.
Bake for 20-25 minutes, or until the peaches are tender and the juices are bubbling.
