Instructions
Preheat the oven to 425℉ Wash the baby Yukon Gold potatoes and place in a bowl or a zipper bag.
24 oz baby Yukon Gold potatoes
Add the minced garlic, salt, pepper, thyme leaves, and cornstarch if using.
2 cloves garlic,
½ teaspoon salt,
½ teaspoon black pepper,
1 sprig fresh thyme,
1 teaspoon cornstarch
Add the olive oil to the bowl and mix all ingredients. If using a plastic bag, seal and mix with your hands.

Turn the seasoned potatoes out onto a large rimmed sheet pan or baking dish.
Set the pan in the preheated oven and roast for 35 minutes, or until the baby Yukon Golds are fork tender. Remove and transfer to a bowl for serving.
