How to Roast Yukon Gold Potatoes
Prepare the Citrus Herb Dressing and set aside for when the potatoes are ready to go into the oven.
Prepare the Citrus Herb Dressing
- Zest and then juice the lemons and oranges.
- In a medium size mixing bowl add the mustard, oil, salt, pepper, oregano, and minced or grated garlic.
- Add the juice mixture and whisk until well blended. Set aside to baste potatoes with.
How long to roast Yukon Gold Potatoes
- You will preheat your oven to 400 degrees F and line a baking sheet with aluminum foil. Spray with non stick spray.
- Add the potatoes to the baking sheet and brush with the Citrus Herb Dressing. Allow 40 - 45 minutes for roasting, checking halfway through and turning so that browning is even.
Remove, Platter, and Serve
- Pull the roasting pan from the oven. Baste the Roasted Yukon Gold potatoes with the more Citrus Herb dressing.
- With pot holders on, gently lift the aluminum foil lining the roasting pan. Gently loosen potatoes and transfer to a serving platter or bowl.
- Garnish with orange and lemon wedges and serve with the Citrus Herb Dressing.

- ¼ cup Dijon mustard
- 2 tablespoon oregano , dried
- 6 cloves garlic , minced or grated

- ¾ teaspoon pepper
- 3 lbs Yukon Gold Potatoes , 2 - 2 ½" size
- 1 orange , cut into slices or wedges for garnish
- 1 lemon , cut into slices or wedges for garnish
Instructions
- Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil. Spray with non stick spray or a little olive oil. Cut potatoes into quarters and scatter on the baking sheet, evenly spread out.3 lbs Yukon Gold Potatoes
- Whisk together the olive oil, orange zest, lemon zest, orange juice, lemon juice, and mustard, oregano, salt, and pepper.4 oz olive oil, 1 teaspoon orange zest, 1 teaspoon lemon zest, ½ cup orange juice, ⅓ cup lemon juice, ¼ cup Dijon mustard, 2 tablespoon oregano, 6 cloves garlic, 1 teaspoon salt, ¾ teaspoon pepper
- Baste the potato quarter well with the Citrus Herb dressing. Roast in preheated oven for 20 minutes.
- Remove baking sheet and gently stir potatoes and baste again with Citrus Herb dressing. Return to the oven and roast for the remaining 20 to 25 minutes until tender, but still firm and browned on edges.
