Fresh avocado, lime juice, onion, and salt are all you need for a simple guacamole that tastes fresh, bright, and balanced. Tomato and cilantro are optional mix-ins, depending on how you like your guac. Keep it chunky or smooth, both work for our Mexican-style favorites.
Chop the onion coarse or fine. If using tomato and cilantro, chop them to the level of chunkiness you prefer also.
½ medium onion, 2 medium tomato, 2 tablespoons chopped cilantro
Halve the avocados and remove the seed. Cut into quarters and peel the skin back from each quarter. Place peeled avocados in a mixing bowl.

Squeeze the lime and add the juice to the bowl with the avocados. Mash to the level of chunkiness you like.

Mix well and season to taste with salt if needed. Serve with tortilla chips or as a topping for tacos, burritos, or other Mexican food.

Maintain texture: Mash the avocados with a fork or potato masher rather than a food processor to keep some small chunks for a more authentic, rustic feel.
Serve immediately: Prepare the guacamole as close to serving time as possible to enjoy the brightest color and freshest flavor before natural oxidation begins.
