How to Air Fry Potato Wedges
The secret to having crispy air fried potato wedges is lightly coating the potatoes with just a little bit of oil. It also allows the powdered seasoning something to stick to. This provides just enough oil to give good and crispy fried surfaces.
In this recipe we will shake the potatoes in a clear plastic bag to lightly coat the potato wedges. Then they will be seasoned and air fried.
Preparing the potatoes
The type of buttermilk ranch seasoning is important. Look for a dry powdered mix, not a liquid! Hidden Valley Buttermilk Ranch dressing is great, but the generic store brand or a specialty blend works great also.
You will find Trader Joe's Ranch seasoning blend convenient because it has a lid and you can store what you don't use.

Cut the potatoes lengthwise into wedges.

Use a powdered Buttermilk Ranch dry seasoning mix.
Seasoning the potato wedges
This is the shake and bake phase. I use any plastic bag (that doesn't have a hole in it!). A vegetable produce bag from the grocery store, or a Ziploc bag is perfect.

Add the potatoes, oil, and seasoning to at bag or bowl, and shake to cover the potatoes well.

Spread the seasoned potato wedges in the air fryer. Or on the broiler grill if your model has one.

Air Frying potato wedges
Your air fryer should come with several slide in racks or an adjustable air frying broil plate. The air fryer I am using has slide in trays. Baking times will vary slightly according to the air fryer. Some air fryers will have presets. Look for the one that is used for french fries.
If your air fryer is more basic, set for 25 minutes with the grill plate lower in the air fryer. This will allow enough time for the potato wedges to completely cook, while not over browning.
You will NOT be turning these over. The air fryer has convection based circulating hot air. Your grill base or slide in grill pan also has lots of holes. This will allow the air flow to circulate and crisp your potato wedges on all sides.

Bake in your air fryer for 25-27 minutes or until crisp and toasty.

Serve with Ranch dip and celery sticks.

Serving suggestions
Air fried potato wedges are great to serve with our Instant Pot Buffalo Chicken Wings or other game day fare. They make a great change of pace for your next steak or burger also! Or, just serve them as a nice side dish to soups and sandwiches like our Cuban Chicken Soup or Panera Tomato Soup.
Substitutions & Variations
Any seasoning mix or dry rub mix would be a great alternative flavor for making air fried potato wedges. A Jamaican Jerk seasoning blend, a dry Barbeque Rub, or Garlic powder & fine grated Parmesan cheese.
You can really think out of the box and try using a Garam Masala or Tandoori spice mixture. Old Bay Seasoning is another popular flavor in our family.
Equipment
Each of these three air fryers are terrific. The 6 quart is perfect for a single or 2 people household. The 12.5 quart size is great for a home with a couple small children.
If you have bigger family that has an appetite, consider the larger size 26 quart air fryer. Big kids eat more, and this size will let you make enough so that you can sit and enjoy the meal with everyone instead of making trips to make additional batches.
Top Tips
- Pat the wedges dry before shaking with the oil, it will let the wedges crisp up better.
- Make sure the potato wedges are shaken with the oil before adding the powdered seasoning mix. That oil not only ensures crispy potato wedges, but helps the seasoning stick to the potato wedges during the air fry phase.
- Get an air fryer that suits your budget and the size of your family. Make sure it has the features you will use so it will save you time.
Frequently asked questions
Yes! They are wetter than regular potatoes, so check them at about 25 minutes to see if they need a little more time.
A great seasoning with sweet potatoes is cinnamon or even cinnamon sugar!
You can freeze them, and they will taste good, but they will lose their crispiness. To refresh them after defrosting, put them back in the air fryer, but cover them with aluminum foil so they don't get burned. Warm up for about 10 minutes. Remove the foil, and warm up another 5 minutes.
