How To Air Fry Potato Wedges
The secret to having crispy air fried potato wedges is lightly coating the potatoes with just a little bit of oil. It also allows seasoning something to stick to. This provides just enough oil to give good and crispy fried surfaces.
In this recipe we will shake the potatoes in a clear plastic bag to lightly coat the potato wedges. Then they will be seasoned and air fried.
Wash And Slice Into Potato Wedges
- Scrub any dirt off the potatoes, then slice in half lengthwise. Cut each potato half into four wedges.
Season The Potato Wedges
- This is the shake and bake phase. I use any plastic bag (that doesn't have a hole in it!). A vegetable produce bag from the grocery store, or a Ziploc bag is perfect.
PRO TIP: The type of seasoning is important. Look for a dry powdered seasoning mix such as Louisiana Cajun seasoning, dry Buttermilk Ranch mix, or our French Fry seasoning blend.
Air Fry The Potato Wedges
- Spread the seasoned potato wedges in the air fryer tray or basket, taking care to only make one layer so the hot convection air can cook and brown each potato wedge evenly to crispy goodness.
- Set the cook temperature to 400 degrees F and cook for 25 to 30 minutes. There is no need to preheat an air fryer, as the small space heats up in less than a minute.
- Check at 15 minutes to see if the potato wedges are browning evenly, turning if needed.
- Remove from the air fryer, and transfer the hot potato wedges with tongs to a serving tray. Serve with your favorite dipping sauces, cheese, minced green onion and sour cream, and enjoy!

Equipment
Equipment can have a big impact on how a recipe turns out. Below are some of my favorite pieces of equipment that I use when making this recipe.
If you have bigger family that has an appetite, consider the larger size 26 quart air fryer. Big kids eat more, and this size will let you make enough so that you can sit and enjoy the meal with everyone instead of making trips to make additional batches.

Frequently Asked Questions
Yes! They are wetter than regular potatoes, so check them at about 25 minutes to see if they need a little more time.
You can freeze them, and they will taste good, but they will lose their crispiness. To refresh them after defrosting, put them back in the air fryer, but cover them with aluminum foil so they don't get burned. Warm up for about 10 minutes. Remove the foil, and warm up another 5 minutes.
