Substitutions
You can make these keto cheddar biscuits with out any cheese, if you prefer. I've not tried the flax seed egg substitute before, but if you needed these gluten free cheddar biscuits to also be vegan, it would be worth a try. I know there are plant based butter, cheese, and milk options also.
Variations
These amazing low carb almond flour biscuits can be varied for either savory or sweet biscuits. I've made the following variations, and love them:
- Keto Sausage Biscuits - replicate that delicious party appetizer of Bisquick and sausage! When working with almond flour, you will need to pre cook some crumbled sausage and then mix into the dough with the milk, eggs, and cheese. Almond flour does not absorb as much grease as all purpose flour. Roll into balls and bake on a parchment paper lined baking sheet.
- Keto Shortcake Biscuits - omit the garlic powder, parsley, and the cheese. Add a little of your favorite sweetener (monkfruit, allulose, etc.) and a teaspoon of vanilla. Drop in ½ cup portions on the parchment and cook about 15 to 17 minutes. Brush with a little confectioners Swerve and water mixed into a slurry for a low carb, sweet top, shortcake biscuit.
- Keto Strawberry Shortcake - Bake the Keto Shortcake Biscuits, then slice in half, top with whipped cream, sliced strawberries, and the top half of the sweet keto biscuit for Keto Strawberry shortcake.
- Keto Cream Cheese Biscuits - for rich sweet or savory keto almond flour biscuits, substitute the butter with grated cream cheese! You can make these sweet like pastry or savory like the keto cheddar biscuits.
- Keto Jalapeno Cheese Biscuits - use the recipe, but add in a few seeded and chopped jalapeno peppers with the cream, eggs, and cheese!
Equipment
Equipment can have a big impact on how a recipe turns out. Below are some of my favorite pieces of equipment that I use when making this dish.
Storage
Store any uneaten keto cheddar biscuits in a air tight plastic container or Ziploc bag. They store great at room temperature for 2 days, or up to a week refrigerated. Use the microwave for 10 seconds to bring them back to that freshly baked tenderness.
Tips for Success
- When reheating, keep the microwave to 10 second intervals to prevent the cheese biscuits becoming tough. If the cheese gets too hot, it hardens, making the biscuits stiff, hard, dry, or tough.
