Keto diets can be heavy on high fat ingredients like cream cheese and macadamia nuts, but they don’t have to be.
Chia seeds are filled with protein and healthy fats, making them perfect for those following ketogenic diets or just trying to enjoy a yummy snack without too much sugar or carbs.
While I used raspberries to top my overnight chia seed pudding, you can use any berries, nuts, or fruit as you prefer.
- Coconut Milk - You can also use Heavy Cream, Half & Half, or any milk. Here are the carbs per cup for: Heavy Cream (.5g per cup), Half & Half (.6g per cup), Whole Milk (11.8g per cup), Coconut Milk (.8g per cup), Almond Milk (1.4g per cup). What you use depends on the structure of your keto macro's you've chosen. Nutrition below is based on Coconut Milk.
- Chia Seeds - use the whole seeds.
- Swerve sweetener - You can also use Monkfruit, Stevia, Allulose, or none.
- Fresh Raspberries - Don't submerge in water to wash, simply lightly spray with water and drain in a colander.

How to Make This Keto Chia Pudding
Ready to take your taste buds on a delicious ride? Then let's get started by discovering how easy it is make this keto chia pudding. It will require all of 5 minutes of your time.
Chose and Measure your "Milk"
If you are on a keto diet, than I am sure you are monitoring your macros for percentage of fat, carb, and protein. Choose the 'milk' option that works with your individual macros for your day.
Heavy cream will make this keto chia pudding more of a 'fat bomb', where using coconut or almond milk will keep the calories low but still low carb enough to qualify as keto. For this recipe, I am using coconut milk, only .8g of carbs per cup.
- Measure 1 cup of the coconut milk (or cream, half & half, or almond milk) into glasses, mugs, or parfait dishes.
Mix in the Chia Seeds
- Measure out the chia seeds and mix into each glass you are preparing. Stir into the coconut milk really well.
Refrigerate Overnight
- Cover each glass and refrigerate overnight.
- When ready to serve, mix in the sweetener of choice and top with fresh raspberries.
Make several portions of this keto chia pudding at one time, because they keep in the refrigerator for up to a week!
