Easy Bacon Egg & Cheddar Breakfast Flautas

These breakfast bacon, egg and cheddar cheese are perfect for a delicious morning dash and go breakfast. They can be served with salsa or sour cream on the side for dipping.

Why you will love this recipe

Flautas are a popular Mexican dish that are made by rolling up a filling in a corn or flour tortilla and frying them.

Breakfast flautas are fast, easy, and delicious! You can make these up a day ahead, brush the tops with butter and bake for 30 minutes right before your guest arrive.

We roll them up individually in wax paper, store in a Zip Lock bag, and let the young adults warm up their own breakfast!

Our German Puff Pancake, Tropical Fruit Salad, or Cinnamon Stewed Pears are both perfect to serve with these breakfast flautas.

Ingredients

  • Flour tortillas
  • Colby or Cheddar cheese slices
  • Cooked bacon slices
  • Eggs
  • Butter
  • Salt
  • Pepper

How to Make Breakfast Flautas

Layout all the ingredients needed for rolling up the flautas. Your mini assembly line will make rolling these fast and easy.

Prepare the egg patties

  1. Whisk an egg in a small bowl.

  1. Pour into a hot skillet and let it get partially set up. Do not flip.

Transfer egg patties to tortilla

Instead of flipping the egg to cook the other side, you will use the tortilla to flip it out. The slightly unset top of the egg patty will finish cooking during the oven bake phase.

  1. Lay the flour tortilla directly on top of the egg patty cooking in the skillet.

  1. Using your hand to support the tortilla, flip the skillet. The egg patty will now be resting on the flour tortilla.

Add bacon & cheese, roll up and bake

  1. Lay the tortilla down on a cutting board. Make a little assembly line to cook the egg patty, lay out the bacon & cheese, and roll up each flauta.

  1. Lay the cheese on first. Then lay the bacon slices close to the bottom edge.

  1. Roll up, lay on the baking sheet seam down. Brush with melted butter and bake so the cheese gets melted and egg finishes cooking.

Serving suggestions

These Bacon, Egg, & Cheese Breakfast Flautas are perfect for morning breakfast grabs or quick morning meals. They are also easy to make ahead and stack on a platter for a breakfast or brunch buffet.

If you need something quick & easy, but out of the ordinary, these would be perfect for a Christmas or Easter morning.

Substitutions

Substitute any cheese you like for the Cheddar or Colby. Thins slices roll up easier though. Grated cheese works also, but it is messier to work with during the roll up phase.

Top Tips

  • Wax paper is best for wrapping individually and storing later for microwave reheating. If you use plastic wrap to wrap them and then reheat, there is a serious struggle liberating a hot flauta from the plastic wrap. Wax paper releases easily.
  • Make a double or triple batch for easy morning breakfasts.

Frequently asked questions

Can I freeze these?

Yes! And if you have any teenagers in your home, you will be so glad you did! Roll up individually in wax paper and store in a zip lock bag in the freezer. Microwave on defrost first then in short 15 second intervals.

Food Safety

  • Do not use the same utensils on cooked food, that previously touched raw meat.
  • Wash hands after touching raw meat.
  • Don't leave food sitting out at room temperature for extended periods.
  • Never leave cooking food unattended.
  • Use oils with high smoking point to avoid harmful compounds.
  • Always have good ventilation when using a gas stove.

Bacon Egg and Cheese Breakfast Flautas

Flautas are a popular Mexican dish that are made by rolling up a filling in a corn or flour tortilla and frying them. In this recipe, we fill ours with bacon, cheddar cheese, and eggs in a flour tortilla for a delicious breakfast dish. They can be served with salsa or sour cream on the side for dipping.
Our recipe is perfect for make ahead morning rush breakfast grabs (just heat in microwave for 20 - 30 seconds), or a brunch or Holiday breakfast layout.

Ingredients

  • 6 flour tortillas
  • 6 eggs
  • 6 slices Colby cheese , thin deli slices
  • 12 strips bacon , cooked
  • ¼ cup melted butter
  • salt
  • pepper

Instructions

  • Preheat oven to 300 degrees F. Brush a rimmed baking sheet with oil or non stick spray. Set aside for later.
  • Heat a skillet and use non stick spray or brush with oil. Whisk one egg in a small bowl, add to heated skillet. As egg starts to set up don't flip, instead lay one flour tortilla on top, and using your hand to hold the tortilla in place, turn skillet upside down so the egg is on top of the tortilla. Lay egg topped tortilla on your cutting board.
    6 eggs, 6 flour tortillas
  • Season egg patty with salt & pepper. Lay 2 slices of Colby cheese on top of hot egg patty. Lay 2 strips of bacon near edge closest to you. Starting where the bacon is, roll up loosely. Repeat for all 6 flautas.
    6 slices Colby cheese, 12 strips bacon, salt, pepper
  • Lay each rolled up flauta onto the prepared baking sheet, with the seam facing down. Brush tops with melted butter.
    ¼ cup melted butter
  • Bake in oven for 30 minutes, cut into chunks as appetizers or serve whole as a meal.

Notes

  • Wrap these breakfast flautas in wax paper instead of plastic wrap, and store in a zip lock bag. This will keep them fresh, and easy to unroll after microwaving. Plastic wrap sticks together so well that it's a wrestling match getting the heated flautas out after microwaving.
  • Purchase the bacon already cooked to save a lot of time.
