Melt the Cheese
This had me hesitant at first, as all I could think of was a disaster of cheese burnt in my pan! But, trust me... this works wonderfully!
- Heat a large (10 to 12" diameter) skillet to a medium high heat. Add ½ cup of shredded mozzarella cheese into the hot skillet. Let it start to melt without disturbing it.
Add the Tortilla
- Place the flour tortilla on top of the melted cheese. Press down gently so that the flour tortilla is smashed into the cheese. Keep heat on medium.
Flip the tortilla
- When the cheese begins to brown (1 to 2 minutes), carefully flip the tortilla by lifting the skillet up, and flipping the tortilla onto a plate, cheese side up.
- Slide the flour tortilla back into the skillet so the uncooked side of the tortilla is on the bottom.
Add Your Pizza Toppings
- Add pizza or marinara sauce to the middle of the tortilla, and then top with slices of pepperoni. You can also use our recipes for homemade Italian Seasoning, or Pizza Seasoning.
Roll up into a Pizza Roll Up
- Using a spatula, carefully roll up the tortilla from one side of the pan to the other.
- After repeating for the remaining flour tortillas, serve with extra pizza sauce for dipping.

- When the cheese is starting to brown, carefully flip the tortilla out of the pan onto a plate, cheese side up. The cheese will be attached to the flour tortilla, which is now underneath the cheese.
- Spread about 1 to 2 tablespoons of pizza sauce down the middle of the cheese covered flour tortilla.½ cup pizza sauce
- Next, top with 6 slice of pepperoni on top of the pizza sauce. You can add more if you prefer.48 slices pepperoni
- Using the spatula, carefully roll up the flour tortilla from one side of the pan to the other. Repeat the process for each remaining flour tortilla and serve immediately.
Notes
- Wrap these pizza rolls in wax paper instead of plastic wrap, and store in a zip lock bag. This will keep them fresh, and easy to unroll after microwaving. Plastic wrap sticks together so well that it is a wrestling match getting the heated roll up out after microwaving.
- Go easy on the pizza sauce, as it will make these pizza rolls soggy if you use too much. Just a teaspoon or so.
