Ingredients
Look for heavy cream, not half and half or light whipping cream. If you can get the 40% cream at Costco, even better!
- Heavy Cream, at least 30% butter fat. Costco sells 40%, and it is even better. The heavy cream keeps the cinnamon rolls moist and flaky.
- Brown Sugar - light or dark, does not matter.
- Ceylon Cinnamon is preferred. It is much sweeter and doesn't get a bitter note if you use a heavy hand (like I do). Saigon Cinnamon is actually Cassia, related to cinnamon, but not true cinnamon. Saigon Cinnamon/Cassia is better for savory dishes.
- Rhodes frozen cinnamon rolls - a package of 12
Ceylon cinnamon is best for baking and sweet dishes. It has a more pronounced cinnamon flavor and less heat.

How to Make TikTok Cinnamon Rolls
This is the perfect morning breakfast to plan for Christmas or Easter morning, or any family weekend brunch. Set the cinnamon rolls up to defrost in your refrigerator the night before.
Let them rise when you first get up, and then bake while your family wakes up to the smell of cinnamon rolls baking and fresh coffee!
Prepare the Cream Mixture
- Combine the cream, vanilla, cinnamon, and brown sugar in a bowl and mix.
- Pour into a baking pan that will hold 12 cinnamon rolls with enough room to double in size.
Defrost the Dough Rolls
- Place the FROZEN cinnamon rolls into the heavy cream mixture in the baking dish.
- Cover with plastic wrap and refrigerate overnight. Best to do this the right before heading to bed.
Proof The Cinnamon Rolls
- Take the cinnamon roll pan out of the refrigerator in the morning.
- Remove the plastic wrap and let the rolls rise for 1 to 2 hours.
Bake The Cinnamon Rolls
- When the rolls have doubled in size bake in the oven at 350 F for 15 to 20 minutes.
- Remove from oven and let cool until just warm.
Ice and Serve Cinnamon Rolls
- Use ½ of a packet to GLAZE the rolls when still pretty warm. Let them cool, then use the rest of the icing to frost them thicker!
PRO TIP: The package of Rhodes frozen rolls comes with two large packets of icing. If you double ice your cinnamon rolls, they will stay moist and fresh longer.

Equipment
You want a 9 x 13 size baking dish or pan for 12 of these cinnamon rolls. My round baking dish was really only suited for 9. You need to leave a little elbow room for them to double in size. So, if baking all twelve, use a 9 x 13 pan.
- Ceramic 9 x 13 Baking Dish
- 9 x 13 Baking Pan (with bonus roasting rack)
Storage
Cover any leftover cinnamon rolls. Reheat in the microwave on 15 second intervals. You can also freeze the baked cinnamon rolls.
