How to make this flatbread
Start with the ball of pizza dough and shape it for the pizza pan or pizza stone you plan to use. Preheat your oven and either place the stone inside to preheat or grease a pizza pan.
Prepare the toppings
- Prepare the toppings for your flatbread. You don't have to use bacon, but it will add more 'meat' to the flatbread. You can use sausage, pepperoni, or even skip the meat portion entirely.

- Slice the onions thin and sliver the garlic.

- Dice the bacon up into rough sizes.

Caramelize the onions
- Use a cast iron skillet, as it gets really hot and caramelizes the onions while crisping the bacon at the same time. You can cook both in the same pan at the same time. Start with the bacon first, cook until half crisp. Then add the onions and garlic.

- Cook onions until they are soft, translucent, and fragrant. Season with salt & pepper to taste.

- Drizzle a little olive oil on the shaped pizza dough. Sprinkle on some seasonings if you wish.

Load the dough with toppings and bake
- Transfer the caramelized onions, garlic, and bacon (again optional, but who can say no?) to the olive oil drizzled flatbread dough. Spread the toppings evenly.

- Top with mozzarella cheese, herbs, and black olives if desired.

- Bake on a pizza pan or transfer to the hot pizza stone. Remove and serve when browned and crispy.

There's a million ways to top a flatbread, and when you make your own you have creative license to make any combination of topping that you please. Use your imagination.
Try Canadian Bacon & Pineapple, or Roasted Garlic and Italian Sausage, or a little red sauce with fresh basil and mozzarella for a Margherita Flatbread.

Caramelized Onion Flatbread

- 1 pizza dough
- 2 med onions, sliced thin
- ¼ pound bacon, diced
- 3 cloves garlic, minced
- 3 tablespoon olive oil
- 8 oz Mozzarella cheese, grated
- 2.5 oz can of sliced black olives
- ¼ cup cut fresh Basil leaves
- salt
- pepper
Instructions
- Preheat your oven to 500 degrees F. Grease a pizza pan, or set a pizza stone on the middle rack of the oven.
- Cook the diced bacon in a heavy skillet until half crisp. Then add in the thin sliced onions and the slivered garlic. Cook until the onions are tender, translucent, and fragrant. Remove from heat.2 med onions, sliced thin, ¼ pound bacon, diced, 3 cloves garlic, minced, salt, pepper
- Shape the pizza dough to fit the stone or the pan. If cooking on a stone, prepare the dough on wax paper on a cutting board, so you can easily slide it onto the stone to bake.1 pizza dough
- Drizzle the prepared pizza dough with the olive oil. Spread the caramelized onion and bacon mixture evenly over the dough. Add the grated mozzarella cheese, the basil leaves, and the black olives.3 tablespoon olive oil, 8 oz Mozzarella cheese, grated, ¼ cup cut fresh Basil leaves, 2.5 oz can of sliced black olives
- Transfer to pizza stone, or put pizza pan in the hot oven. Bake for 14 minutes, checking at 12 minutes. Remove from oven when browned and crisp on the edges. Serve immediately.
