The ingredients you need for this Pumpkin Crumbl cookie recipe are pretty standard for most pantries. You probably already have these ingredients in your cupboards.
- Butter
- Salt
- Granulated sugar
- Brown Sugar - packed.
- Egg yolk
- Pumpkin puree
- Vanilla extract
- Flour - All purpose or gluten free flour.
- Pumpkin pie spice blend - (or 3 parts cinnamon, 1 part ginger, 1 part nutmeg, 1 part cloves, and optional 1 part allspice). A tablespoon has 3 teaspoons, so you can use 1 tablespoon of cinnamon and 1 teaspoon of all the other spices. Parts let you make as much or as little as you need.
- Extra Cinnamon - Use Ceylon cinnamon for all baking, it is true cinnamon, not Cassia, and has a sweeter profile.
- Baking Powder
- Easy Cream Cheese Frosting with Pumpkin spice blend to flavor it.

How to Make Pumpkin Crumbl Cookies

Make the Pumpkin cookie dough
- Preheat the oven to 350° F. Prep the baking sheets with parchment paper and set aside.
- In a medium mixing bowl cream the butter, salt, granulated sugar, and brown sugar.
- Add the egg, pumpkin puree, and vanilla extract to the butter & sugar mixture.
- Blend until smooth and creamy.
- Mix in the flour, pumpkin spice blend, cinnamon, and baking powder using an electric hand mixer.
Shape & Bake the Cookies

- Flatten each cookie slightly with your hand before placing in the oven to bake.
- Bake 13 minutes and then remove. Cool 5 minutes and transfer to a cooling rack. Let cookies cool completely before icing.

- Mix the Cream Cheese Frosting, with ½ teaspoon of Pumpkin Spice blend. You can also purchase frosting and mix in the pumpkin spice blend.
- Fill a piping bag fitted with a round piping tip (or cut a small hole in the corner of the bag) with the frosting.
- Make the signature Crumbl cookie look by piping a large swirl of icing starting from the center of the cookie outwards.
- Lightly dust the tops of the cookies with the last ½ teaspoon of Pumpkin Spice blend. Serve.
