How to Make this Peppermint Patty Recipe

These treats are perfect for Christmas parties, family gatherings, and gift giving. Plus, they're simple enough that even beginner cooks can make them with ease.

Make the Peppermint Filling

Turn your Wilton Candy Melting pot on, and add the chocolate chips. If you have two heat settings, use the lower setting. Let the chocolate chips melt while preparing the peppermint patty candy dough.

If using the microwave to melt the chocolate chips, wait until the candy dough circles are placed in the freezer to chill.

  2. Place the baking sheet in your freezer for 10 minutes while finishing melting the chocolate chips.

Dip in Chocolate

  1. If you used a Candy Melting Pot to melt the chocolate chips, you can dip the peppermint patties after they have chilled in the freezer for 10 minutes.

If using the microwave, heat in a microwave safe bowl for a 1 minute burst, then stir. Repeat on 15 second intervals, stirring each time, until melted, and smooth.

If the chocolate chips seem stiff, or too thick, use a teaspoon of coconut oil or shortening to thin the mixture out. Do not overheat, as this causes chocolate to stiffen or seize.

Substitutions and Variations

I've a few great variations you can make with this homemade peppermint patty recipe:

  • Mini Peppermint Patties - Use a mini 1" circle cutter (used for cheese and canape shapes). Cut the mini circles out after rolling the the candy filling out. Chill in the freezer and dip in the melted chocolate following the recipe.

  • Milk Chocolate Peppermint Patties - Use milk chocolate instead of dark chocolate for dipping. Melt a small amount of dark chocolate to drizzle over the milk chocolate covered peppermint patties.

  • Christmas Peppermint Patties - White the chocolate coating is still wet, sprinkle a light scattering of Grinch themed, or Christmas sprinkles on them.

Equipment

Equipment can have a big impact on how a recipe turns out. For this homemade peppermint patties, it is ideal to have a candy melting pot, a 3 pronged candy dipping fork, a silicon pie dough rolling mat, and a baking sheet.

  • Wilton Candy Melting Pot
  • Candy Dipping Tools
  • Silicon Pie rolling mat
  • Large Rimmed sheet pan
  • 3" Round Cookie cutter

Storage

After the chocolate coating on your homemade peppermint patties is firm, store in air tight containers or bundle up into gift giving decorative tins or gift boxes.

Tips for Success

  • A candy melting pot is worth the investment, as it keeps a low steady melting temperature, helping to keep the chocolate fluid.
  • If melting chocolate with the microwave, always use low heat (the defrost setting if you don't have heat levels). Too much heat causes chocolate to stiffen up and seize.
  • Another option for melting chocolate is to place the chocolate in a bowl, and set the bowl in a pan of hot water. Not simmering water, but just hot water. It will melt the chocolate chips without any seizing.
